Embrace the Autumn Vibes with our Thai-Inspired Buddha Bowl featuring Clonakilty Pork Sausages.

Ingredients

  • 8 Clonakilty Irish Pork Sausages casing removed.
  • Fresh veggies –bell peppers, fresh avocado, red chili, roma tomatoes, fresh cucumber, crushed garlic, red onion, sesame seeds, lightly steamed carrots, and a juicy lime.
  • Fragrant herbs – thai basil to bring an aromatic twist to the dish.
  • Rice or grains – opt for sushi rice, or try quinoa.
  • Delicious Thai-inspired sauce – Oyster sauce, fish sauce, lime juice, soy sauce, and a hint of fresh chili for that extra kick!

Method

  1. Start by removing the casing from the sausages. Lightly drizzle peanut oil or vegetable oil in a wok or frying pan on medium to high heat. Cook the sausage meat breaking it apart with a wooden spatula until fully cooked. Once cooked place the sausage meat into a bowl and cover with clingwrap.
  2. While the sausages are sizzling, prepare your choice of rice or grains as per the package directions and set aside. Slice and steam the carrots.
  3. In the wok add the sliced red bell pepper and grill until fragrant and slightly charred, and set aside.
  4. Add 4 tbsp oyster sauce, 1 tbsp fish sauce, 1 tbsp soy sauce, 2 tsp of crushed garlic, 1/2 sliced red chili, 1/2 sliced red onion, and 1 tsp sugar, 1/2 cup of chopped Thai-basil and stir until fragrant. Add the Clonakilty Sausage meat and simmer for 2 to 3 minutes.
  5. Assemble your Buddha Bowl by layering the cooked rice or grains, the veggies, and the Clonakilty Irish Pork Sausages.
  6. Garnish with additional fresh herbs, lime wedges, sliced roma tomatoes, sliced cucumber, fresh avocado and a sprinkle of sesame seeds for that final touch!
