Devil dust eggs

An easy breakfast with a flavor hit that packs a punch. Poached eggs on toast with smashed avocado, kale topped with Clonakilty Black Pudding crumb.


1 – 2 eggs, very fresh eggs required for poaching

½ avocado

1 x 1cm slice Clonakilty Black Pudding

2 thick slices toast

100g baby kale

10g butter

100g baby kale

1 tsp lemon juice

Salt and pepper


  1. Fry the black pudding for two minutes each side, then set aside to cool before crumbling.
  2. Poach the eggs for three minutes then remove with a slotted spoon.
  3. Melt the butter in a small pan to wilt the kale, add a little lemon juice and season.
  4. To serve, spread the avocado over one piece of toast, lay the baby kale alongside and top with poached eggs and a little chilli flakes and sprinkle with the black pudding crumb.
