An easy breakfast with a flavor hit that packs a punch. Poached eggs on toast with smashed avocado, kale topped with Clonakilty Black Pudding crumb.
Ingredients
1 – 2 eggs, very fresh eggs required for poaching
½ avocado
1 x 1cm slice Clonakilty Black Pudding
2 thick slices toast
100g baby kale
10g butter
100g baby kale
1 tsp lemon juice
Salt and pepper
Method
- Fry the black pudding for two minutes each side, then set aside to cool before crumbling.
- Poach the eggs for three minutes then remove with a slotted spoon.
- Melt the butter in a small pan to wilt the kale, add a little lemon juice and season.
- To serve, spread the avocado over one piece of toast, lay the baby kale alongside and top with poached eggs and a little chilli flakes and sprinkle with the black pudding crumb.
