This whopper of a burger created by Another Food Blogger is topped with slaw, fried egg and of course you cant forget the Clonakilty Blackpudding! This combination works perfectly!
The Slaw is made from beetroot (an Aussie classic) which has a sweet but earthy flavour and Granny smith apple (a classic with pork) and has a lovely fresh and acidic taste. The two of these help elevate this burger beyond your avg mid-week burger. The slaw goes on the base of the bun to protect the bun (as would the lettuce) from the burger juices but also adds a little extra texture to the burger too. Other things that can be used in slaw are carrots, red cabbage, white cabbage, kale, and/or onion.

Pork mince x 600g
CBP x 200g
Apple x 1
Beetroot x 1 – peeled
Burger buns x 4
Eggs x 4
Mayonnaise/Aioli x 4 tbsp
Salt
Tomato Chilli Jam *see tips*
Truss tomatoes x 6 – cut in half
Garlic cloves x 2
Vinegar x 100ml
Ginger x thumbsized piece – chopped
Brown sugar x 1 cup
Soy sauce x 2 tbsp
Salt x 1 tsp
Red chili x 2 – chopped
Lemon juice x ½ lemon
