Take this sandwich to another level by adding our delicious tasting Clonakilty Sausages to give you the best Sausage Sandwich ever! Whether you choose to use a pesto sauce, a tomato sauce or even just butter, it’s the Clonakilty Sausages that are the highlight of this treat and a great choice when hunger strikes!
Ingredients
3 or 4 Clonakilty Sausages (sliced in half lengthways)
1 ciabatta roll (sliced in half)
2 tbsp of fresh pesto or sauce of your choice
1 roasted red pepper from jar (sliced)
½ 125g ball mozzarella (sliced)
Handful rocket
Method
1. Heat grill to high.
2. Put the Clonakilty Sausages on a baking sheet, cut-side down, and grill for 5-6 minutes or until cooked through, then set aside.
3. Lay the ciabatta roll halves, cut-side up, on a baking tray and spread each one with pesto or a sauce of your choice.
4. Top each half with a pepper and mozzarella slice, then grill for 2 minutes or until golden and bubbling.
5. Add the Clonakilty Sausages and a handful of rocket and put the roll back together, pressing down firmly to hold the fillings in place.
